The Farmers

Presently, Viable Cultures works with three local farms, Jake’s Farm (Candler), Gladheart Farms (Asheville), and Peaceful Valley Farm (Old Fort), to source locally-grown ingredients for the fermented foods.  Jake’s Farm and Gladheart Farms organic cabbages are used in Vital Veggies raw sauerkrauts.  Peaceful Valley Farm non-GMO soy beans are used in Cool Beans soy tempeh.  Viable Cultures favors locally-grown ingredients when possible and is proud to be working with these local farmers.

Gladheart Farms —

farmers at Gladheart Farms, in Asheville, working with organic cabbagesGladheart Farms is a local certified organic farm located within the city limits of Asheville, NC. We are committed to local, sustainable agriculture, and preserving and reclaiming urban farmland. All of our farm equipment is run from biodiesel. We collect local waste vegetable oil and make it into biodiesel for on farm use. Our greenhouse uses a state of the art waste oil boiler system to heat with. This system can use biodiesel, glycerin, used motor oil and regular diesel fuel. We grow and distribute organic produce in North Carolina, South Carolina, Tennessee and Georgia.

Peaceful Valley Farm —

John McEntire stands beside his field of Ozark soy beansThe McEntire family has lived and worked the farm for five generations.  The farm is located on Pine Cove Road in Old Fort, NC.  Currently the facility operates as an educational, working farm. It is open for field trips, weddings and other special events.  We grow a large garden, corn, wheat, soy beans, and sorghum cane.  The white field corn is used for grits and corn meal.  The wheat and soy beans are sold to local chefs.  Molasses are produced each fall from the cane during a fall farm day which is held annually.
