Health and wellness are key in the experience of a joyful and productive life. A substantial component of vital human health is vital human food. Fresh, vitamin and nutrient-rich foods fit the bill. No foods are fresher and more nutritious than those produced locally and consumed in their season of ripeness.
Human health and wellness rests upon the health and integrity of the environment in which people inhabit. In attaining the wholeness and complexity of human wellness, we must protect and preserve environmental health. In terms of food production, ecological agriculture and a sustainable distribution system fit the bill. It is important to support “organically-grown” and “locally-grown,” for the health of the environment, and for the health of the people.
The Asheville community has put out a resounding call for local, naturally-grown foods, foods that are both good for people and good for the environment.
Now, take these wholesome, locally-produced foods, and transform them in order to enhance their nutrition and flavors. These foods become more digestible and are rich in digestive enzymes. The microorganisms involved in the transformation are pro-biotic and their presence in the human digestive system benefits the body and digestive and immune function. MISSION STATEMENT
To foster a viable culture by nourishing human health, honoring and protecting the Earth and all inhabitants, and engaging a vibrant, local economy. To provide vital, fresh, nutritious, and delicious fermented foods, favoring locally-grown ingredients, utilizing hand-made, energy-wise, and minimal-waste production and distribution methods.
Local business serves the community directly. It is inherently responsible and accountable to its customers. The workers of local businesses are community members, in the flesh, fully integrated in the life of the community.
Viable Cultures is Asheville’s fermented foods producer, offering exceptional quality products and dependable customer service. Tempeh, raw sauerkraut, and kombucha are produced in Asheville, available at groceries, served at restaurants, and sold at farmers markets and direct to customers by special order.
